Recipe: Winner Dinner – Homemade Nuggets and Cheesy Veg

Nugget Ingredients

  • 1 large chicken breast or chicken substitute
  • ½ cup Italian Breadcrumbs
  • ¼ cup Flour
  • 1 Large Egg
  • Garlic and Onion Salt
  • Cooking Oil


  1. Heat 1 cup cooking oil in a small frying pan.
  2. Beat egg in small bowl
  3. Mix Garlic, onion, and breadcrumbs together in a separate bowl
  4. Spread out the chicken breast and cut into small cubes (10-12)
  5. Dip in flour then egg
  6. Rub in breadcrumb seasoning
  7. Cook in oil on medium heat for 3-4 minutes on each side
  8. Add lemon to taste

Cheesy Veg Ingredients

  • Cauliflower and Broccoli or Vegetables of your choice
  • 1/2 cup plain dry breadcrumbs
  • 1/4 cup Parmesan cheese
  • 2 tablespoons butter or margarine, melted
  • 2 teaspoons of Italian Seasoning, Garlic and Onion
  • 2 tablespoons flour
  • 1 cup of milk
  • 1/2 cream cheese, cubed
  • ½ cup shredded mozzarella


  • Preheat oven to 350 F
  • Cut up cauliflower and broccoli into small pieces
  • Mix ½ the breadcrumbs, 2 tablespoons parmesan, and ½ the seasoning together in a bowl
  • Melt butter in a large pan or skillet on medium heat.  Add in flour and milk and the other half of the seasoning. Stir in cream cheese and the remaining parmesan. Stir until creamy.  Add and saturate vegetables.
  • Add to baking dish. Layer the mozzarella cheese on top and sprinkle with remaining breadcrumbs. Bake for 40 minutes, with the last ten minutes the lid off.
