Recipe: Cinnamon Muffins

Ingredients:
  • 1 ⅓ c. flour
  • ⅓ c. sugar
  • ½ t. baking powder
  • ¼ t. baking soda
  • ¼ t. salt
  • ½ t. cinnamon
  • 1 egg
  • ¾ c. milk
  • 2 t. oil
Directions:
  1. Preheat the oven to 375° F.
  2. Stir the first 6 ingredients together in a medium bowl. Add egg, milk, and oil. Mix until combined.
  3. Line mini muffin pan holes with paper liners or spray with non-stick spray. Fill each cup about ⅔ full.
  4. Sprinkle with cinnamon sugar mixture (½ c. sugar and 1 T cinnamon).
  5. Bake at 375° F for 9-10 minutes.
